It's not particular hard just commandline orientated (with extensive
inbuilt help) which means it's great for doing batch of graphs. I use it
all the time and it's very powerful and has inbuilt fitting.

Gnuplot exports to these and more. I use for graphs in journal papers.
Combine this with xfig or qcad and LaTeX2e (with graphicx and psfrag
packages) meets most of my needs. Plus you can manipulate data using all
the text processing tools of unix and gnu.
